Summer is flying by and it feels like we have been out of town almost every weekend. This weekend, we were FINALLY home. It was perfect opportunity to host an outdoor dinner party! I wanted to go with a summery recipe, and I was adamant that we eat outside in our apartment's cute court yard.

A cheese plate is always a no-hassle appetizer and also a fan favorite. Win-Win! Brie and Chipotle Gouda were the picks for this particular night. I made these plates myself with a can of Chalk Board Paint from Michaels and 2 old salad plates.
For the main entree, I decided on Buffalo Chicken Sandwiches. It was almost too easy to be true.
- 6x Boneless Chicken Breasts
- 20 oz of Buffalo Sauce - Be sure to save sauce to pour on top of each sandwich
- Packet of Dry Ranch Dressing Mix
- Buns - better when toasted!
- Toppings Options: Blue Cheese Crumbles and Sliced Avocado
Put everything in the crock pot on low for 6 hours. You may have to pull the chicken apart with a fork, but it should shred by itself for the most part.

I also fixed a Summer Vegetable Medley... super easy and delish!
- 1x Can of Corn
- 1x Can of Black Beans
- 1x Can of Chick Peas
- 1x Small Red Onion - Chopped
- 1x Tomato - Diced
- 2x Avocados - Diced
- Salt, Pepper and Cilantro Dressing to Taste
I also made a box of Jiffy Corn Bread in my mini muffin tins...Kind of lazy on my part but it's easy and tastes great! I am all about keeping it low maintenance.
Desert was my favorite...as usual!
-Chocolate Chip Cookies with a scoop of Talenti Vanilla Bean Gelato and Sea Salt Caramel Gelata
It was such a fun night with great friends and great food!
