So if you haven't noticed by now, most of my recipes are Paleo. In the house, we really don't eat bread or wheat. On the weekends, I totally splurge when we are out. Sandwich with a side of french fries please! But during the week, we are wheat free. Sometimes this lifestyle choice can get...well...BORING. I am always looking for new Paleo recipes. Thanks to Pinterest, they are not hard to come by!
Tonight I made buffalo chicken lettuce wraps! They were flavorful and satisfying. That is all I can ask for in a healthy meal. Ingredients are lettuce, onions, pepper, avocado, blue cheese, chicken and buffalo sauce.
I boiled the chicken so it would shred nicely. Then I poured the buffalo sauce over it and mixed it together. Usually I would make my buffalo chicken in the crock pot like I did for my summer dinner party, but I started too late today. I chopped and sauteed the veggies while the chicken was boiling.
Peeling the lettuce head into wrap-worthy sheets is not the easiest task. Tip: Go slowly.
I also set out some blue cheese and diced avocado. Yum!

That looks absolutely delectable, Megan! It's amazing how easy it is to make too. I'm sure the whole family was surprised to see something new on their plates, but happy to gobble them up, nonetheless. Hahaha! Thanks for sharing the recipe! Happy eating! :)
